I have been following VSED literature from Germany, Netherlands, and Switzerland. But I just discovered this Taiwanese book: Bi Liuying, Death with Dignity by Fasting (Taipei City: Maitian Publishing House, 2022). [斷食善終]
The book was republished in Korean this year. The author helped her mother VSED, and subsequently helped over 100 others.
